High Prices, Unhealthy Food

Christopher Kimball, the founder of America’s Test Kitchen, recently started a new project: Parents Against Junk Food, a non-profit organization trying to stop the sale of junk food in America's schools.
There's ample evidence that junk food is creating a crisis in our country: By the time kids born in 2000 reach adulthood, a third of them will have diabetes. So what does Kimball propose we do about it?
In "High Prices, Unhealthy Food, an editorial first published in the Boston Globe, Kimball argues that we could save ourselves from devestaing health risks just by choosing natural foods over processed ones.
"Many would claim that the food industry is simply giving us what we want: full-flavored, shelf stable, convenient food choices," he writes. "We could, through different purchasing decisions, change the food industry overnight."
